Citizen is a food upcyling collective. We're a group of chefs, brewers, bakers and innovators who want to reduce food and resource waste. We rescue surplus foods and upcycle them into delicious food and drink.
Citizen craft beers are made using rescued unsold bread to replace a quarter of the malted barley in each brew.
Our sourdough loaves are made with 15% of the regular flour replaced with spent-grain flour from our brewing process.
And we've just launched Citizen Piquette, made by giving the grapes leftover after winemaking a second squeeze. Cheers!
